BUTTER TARTS, makes 48
The filling
2Eggs
2tbspSoft margarine
1-1/2cupBrown sugar
2tspVanilla
1pinchSalt
2/3cupPecans
Mix to a creamy texture. Save the pecans to add later.
The crust
6ozCream Cheese
1cupButter
2cupsFlour
Soften the cheese and butter then mix in flour.
Shape into 1 inch balls and pat into mini muffin tins.
Fill with filling mixture to about 2/3 full and top with a pecan half.
Bake at 325 degrees for 25 minutes or until set.
Allow to cool and store in refrigerator.
